1. Egg and Mashed Potatoes Frittata

This dish makes for a yummy, protein-rich breakfast. To make Egg and Mashed Potatoes Frittatas, you first need to saute onions and ginger-garlic paste. Next, add oregano, salt, red chilli flakes as well as capsicums to the pan. Start stir-frying and then add your leftover mashed potatoes. If you are baking the dish, transfer the mixture into a flat bowl. Break the eggs on top (3-4 if you have a leftover mash of 4 potatoes). Sprinkle bread crumbs and add grated cheese on top of the eggs. Put the bowl in the oven and bake till the top layer turns brownish and the eggs are almost cooked. Add a roasted mixture of besan and maida, along with bread crumbs, to the mashed potatoes and veggies. Add red chilli powder, roasted jeera powder, turmeric powder, and coriander powder and mix. Ensure that the keema is as dry as possible to avoid having a heavy filling. Seal the edges together on top to form spheres, lightly flatten them and roll them in maida.
